How is BaiJiu Made?
Process
Baijiu is made from fermented sorghum, although some distilleries blend it with barley, corn, wheat, or other grains which are mixed together, covered, and let to ferment in in-ground vats for 60 to 90 days.
Once the fermentation is complete it is distilled in various stages with the distilled product of each stage stored separately for aging and blending.
Variations in taste come from the kind of yeast used, water source, grain type and source, aging and blending.
